It's the whole fillet, trimmed of it's tail, Ann - if that makes sense. Imagine lots of fillet steaks as one long, circular, piece of meat.

I hadn't before DR, tbh, Ann. We tried it when my BIL and SIL visited in February and, for carnivores, it's heaven. We have it down for Xmas dinner this year, I'm tired of turkey.
