Preventing upgrade and 'poisoning the DNS'

Dual SSID with software 5.29.107.12

Do I need to prevent upgrade to this version? Can I?

Do I need to 'poison the DNS' as in the single SSID set-up guide?

No 5.29.107.12 has been automatically upgraded for some time, that particular upgrade server has been discontinued.

DNS poisoning does not work.

Have a read through the Tripod Guidance for the 2700HGV, it is always up to date on current understanding of the router.
